ROOT DAUPHINOISE

root dauphinoise

Taking a Dauphinoise and giving it a modern twist with extra coloured layers and earthy tones gives this creamy classic a fresh lease of life. Our root dauphinoise are perfect with a rustic rabbit pie or roasted haunch of venison. Proper weekend food and elevate the humble root vegetables back to the centre piece of a roast dinner.

This is also a great way of taking leftover root vegetables and using them at the same time in a dish bound together by a simple sauce.

SMOKED HADDOCK & MUSSEL CHOWDER WITH SPRING GREENS

We wanted our bowl of chowder to not simply be pale cream in colour, whilst still using our dairy to offer that familiar and well-loved creamy soup quality. To achieve something a bit different that still works with the mussels and smoked haddock we went for a variety of spring greens and fresh herbs. This recipe is worth trying if you love a good traditional chowder but are also a bit adventurous – enjoy!

PIZZA BIANCO

Pizza almost always revolves around the classic tomato and cheese partnership. This recipe is a creamy white sauce that can be adapted for either a ham and mushroom pizza or something like an artichoke and anchovy combination. The key is a really good white sauce and the rest is just a chance to experiment.

The same white sauce can also be a lovely used with some pasta for a quick Alfredo. In this recipe we’ve taken the pulled pork trend and tried to pair it with a classic Italian style pizza.

SALTED CARAMEL APPLE PIE

Good old fashioned apple pie is a true seasonal treat that brings a smile to everyone’s face. The salty and sweet caramel sauce is a slightly modern take on the traditional pie without being a bridge too far. Once you master this simple short crust pastry recipe the world is your oyster – or should we say the pie is nigh!

For some new ideas try: Bourbon Pear Crumble, Apple and Blackberry with hazelnuts or Plum and Star Anise…
