Get into the spooky spirit with this Halloween cheesecake. Rich, creamy and delicious, this treat is perfect for any Halloween celebration.

Method

Step 1

Put the biscuits into a food processor and crush until a fine crumb. Add the melted butter and mix.

Step 2

Put the crumb into a 23cm cheesecake tin and press down to form the base. Chill in the fridge for a minimum of 30 minutes.

Step 3

Mix the soft cheese, mascarpone, orange zest, sugar and milk in a bowl and mix with a hand mixer.

Step 4

In a separate bowl whip the cream with a hand mixer until it is thick like sauce. Add the yellow and red colouring to your chosen colour and then add to the cheese mix mixing gently.

Step 5

Remove the biscuit base from the fridge and spread the cheese mix evenly. Return to the fridge for at least 4 hours to set.

Step 6

Remove from the fridge and decorate with your favourite Halloween patterns.

15 x bourbon or chocolate digestives

6tbsp Trewithen unsalted butter

400g full fat soft cheese

Red & yellow food colouring

Zest of 3 x oranges

200g mascarpone cheese

100g caster sugar

3tbsp Trewithen Whole or Semi Skimmed Milk

184ml Double Cream
