Originating in India, Masala Chai is a popular drink throughout South Asia but now enjoyed the world over. This warming, hug-in-a-cup is an autumn recipe just perfect for providing the snug factor on rainy afternoons.
Our Cornish twist on a masala chai recipe gives all the fragrance and an extra dose of cosiness to warm the cockles and soothe the soul.Â
Masala Chai Tea Recipe (Cornish-Style)

Step 1
Put the cinnamon stick, cardamon pods and fennel seeds in a pestle and mortar. Blend to a coarse consistency, taking in the warming aroma of the spices as you crush and blend.Â
Step 2
Take your whole milk, the crushed spices, tea bags, vanilla pod and ginger and bring to a boil in a pan on the stove. Once boiled, reduce the heat and simmer for 10-12 minutes to allow the spices to infuse the milk. Stir frequently to ensure the milk doesn’t stick to the pan.
Step 3
Add 100ml of water and keep simmering for 4-5 minutes whilst stirring.
Step 4
Add the sugar, stirring all the while until it has dissolved.
Step 5
Strain the milky tea into your favourite mug and serve.

- 1 vanilla pod (seeds removed)
