Smoked butter & Chive potato salad
Serves: 4Method
Step 1
Cold smoke your butter using Apple or Maple for 6 – 8 hours or longer if time allows. Then mix in a bowl with finely chopped chives and smoked garlic powder. If you have any smoked water, then you can add a few drops at this stage to boost the smoky flavour.
Step 2
Then form the butter into a pat or roll in baking paper and chill in the fridge.
Step 3
For the smoked butter potato salad simply toss the hot, boiled potatoes in your homemade smoked butter, adding fresh lemon zest to the potatoes before serving.

For the butter:
250g Trewithen salted butter
Apple of Maple Wood shavings or dust
1 – 2 tbsp finely chopped chives
1 tsp smoked garlic powder
To serve:
1 kg new potatoes, boiled
Generous pinch of sea salt
Zest of 1 lemon
